The ethnobotanical cuisine project brings back to the table the flavors of wild herbs and the scents of the Murgia park: the most vivid part of an anthropological memory transmitted orally for centuries. Most of the ingredients used are the result of hand-picked authenticity. A sincere and introspective cuisine, marked by the alternation of the seasons and the daily gestures aimed at the land: secrets that the brothers pass on to their guests. The menus offer a journey made up of entirely vegetable dishes and others of animal origin, accompanied by a vast selection of wines. The path is defined according to the availability of the products offered by everyday life: the search for small local producers and top quality ingredients are the absolute protagonists of the cuisine, dictating the rhythms and creative choices.
