Rediscover the dialogue between man and nature. This is the extraordinary vision of brothers Francesco and Vincenzo Montaruli. The ethnobotanical cuisine project brings back to the table the flavors of wild herbs and the scents of the Murgia park: the most vivid part of an anthropological memory transmitted orally for centuries. Most of the ingredients used are the result of hand-picked authenticity. A sincere and introspective cuisine, marked by the alternation of the seasons and the daily gestures aimed at the land: secrets that the brothers pass on to their guests. The menus offer a journey made up of entirely vegetable dishes and others of animal origin, accompanied by a vast selection of wines. The path is defined according to the availability of the products offered by everyday life: the search for small local producers and top quality ingredients are the absolute protagonists of the cuisine, dictating the rhythms and creative choices.
