Respecting French tradition, Machine Shop is dedicated to quality, technique, and locally-sourced ingredients. The breads are made using a long-fermentation, high-hydration process that produces naturally nutritious breads with complex flavor profiles. The pastries use a sourdough starter, adding depth of flavor to traditional French viennoiserie. Machine Shop's goal is to bring a fresh modern approach to French classics, keeping seasonality and local in mind.
