Overview
MAZ is a new gourmet restaurant in Tokyo by Virgilio Martinez of Central — a Peruvian restaurant in South America that ranked #1 in The World's 50 Best Restaurants (2023). Inspired by Virgilio's worldview and Mater's motto, "Afuera hay mas" (there is more out there), MAZ uses this new location to share its cultural and ecological knowledge of Peru's landscapes and ingredients, to offer a unique gastronomy experience to diners in Tokyo.
