Overview
Influenced by his grandfather, who loved fishing, Kenichi Nemoto came into contact with the rich nature and fish in his childhood, and wanted to express the beauty of food and life, and decided to become a chef. After gaining experience in France and Japan, he became independent after completing Quintessence. In June 2021, he opened NéMo — showcasing an abiding love for the sea in his set menus.
