Pepe in Grani is Franco Pepe's project dedicated to pizza, research, and hospitality. A multifunctional structure organized on several levels, where an entire territory is served on a fragrant disc of pizza dough. The brand combines the experience of three generations of pizza artisans and the desire for experimentation and research on doughs and cooking that has always distinguished Franco Pepe, the award-winning pizza chef from Caiatino. Heir and keeper of a precious heritage of knowledge related to the art of baking, handed down from his grandfather and father Stefano, Franco Pepe is famous for his dough worked strictly by hand, in the wooden cupboard, naturally leavened at room temperature for more than 12 hours and made in the total absence of technology and electricity. His method has no fixed rules, but is based on ancient gestures and free combinations of flours studied day by day based on gluten, the strength of the blends, humidity, and ambient temperature.
