Shin-Zushi
Overview
Founded in 1981 by chef Shinji Mizumoto and now run by his sons Ken and Nobu Mizumoto, Shin-Zushi showcases authentic Japanese traditions and cuisine. Shin-Zushi restaurant is a great protector of the Edomae style. This style of traditional Japanese cuisine focuses on valuing regional foods available for the development of dishes, which are delicately prepared and presented in their most natural state so that their essences and flavors are subtly highlighted.
