Tsuke Edomae expresses Japanese techniques and ingredients, including Edomae sushi and cooked items. Through Chef Mikes's training in Ginza Tokyo (at Hakkoku under Hiroyuki Sato), Tsuke has become a licensed U.S. importer, which means working directly with the professionals he visited daily during his apprenticeship at Toyosu Fish Market. At Tsuke Edomae, savor ingredients from legendary tuna vendor Yamayuki, uni from Kaihou, hikarimono from Shiobara San, anago from Yoshino San, buri/bonito from Shima San, and enjoy a piece of Ginza Tokyo in Austin, Texas.
