Inspired by the principles of New Nordic Cuisine, it integrates Japanese and Korean techniques, and values ​​such as seasonality, respect for the environment, and purity of flavor. EMi's cuisine is the result of a life and professional journey that has taken the chef from his small town of Reina (Badajoz) to Tokyo, Copenhagen, New York, and now back to Madrid.
