Recipes that speak the language of nature, that describe the territory, that taste local products, that mix with distant, sometimes very distant suggestions, collected around the world on a journey of knowledge and fifteen-year-long study. Aromatic herbs, spices, roots, and plant species grown personally by the chef together with his staff in the garden and greenhouse are the foundation on which the cooking philosophy and the MAD100%Natura® path are based, the result of a constant search for maximum interpretation of the vegetal element.
