Overview
Balzi Rossi offers a cuisine with clear and decisive flavors, in which the primary objective is gustatory perfection through the use of a few selected ingredients, such as wild herbs and fish, of minimal work on raw materials, flame cooking, and homemade preparations. There are two written tasting menu options, Riviera and Liguria, to which is added a menu consisting of the same dishes, and the Momento menu, created as a surprise as well as the matching wine itinerary. Great importance is attributed to the themes of lightness and sustainability, as well as to the tradition of the place, which still lives on in the iconic recipes of Giuseppina Beglia, always on paper.
